Ingredients
- 500 grams boneless chicken thigh fillets, cut into bite-sized pieces
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon cooking oil
- 2 cloves garlic, minced
- 1/2 cup sweet chili sauce
- 1 cup pineapple chunks (fresh or canned)
- 2 tablespoons pineapple juice (from the can or fresh)
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar (optional)
- Sliced scallions, for garnish (optional)
Instructions
- Season the chicken pieces with salt and pepper.
- Heat the cooking oil in a wok or large skillet over medium-high heat.
- Add the chicken to the hot oil and stir-fry until lightly browned and cooked through, about 6 to 8 minutes.
- Add the minced garlic and stir-fry for another 30 seconds until fragrant.
- Pour in the sweet chili sauce, pineapple juice, soy sauce, and rice vinegar. Stir to coat the chicken evenly.
- Add the pineapple chunks and cook for 2 to 3 more minutes until everything is heated through and well combined.
- Taste and adjust seasoning if needed. Garnish with scallions if desired and serve immediately.
