Ingredients

  • 500 grams boneless chicken thigh fillets, cut into bite-sized pieces
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon cooking oil
  • 2 cloves garlic, minced
  • 1/2 cup sweet chili sauce
  • 1 cup pineapple chunks (fresh or canned)
  • 2 tablespoons pineapple juice (from the can or fresh)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar (optional)
  • Sliced scallions, for garnish (optional)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the cooking oil in a wok or large skillet over medium-high heat.
  3. Add the chicken to the hot oil and stir-fry until lightly browned and cooked through, about 6 to 8 minutes.
  4. Add the minced garlic and stir-fry for another 30 seconds until fragrant.
  5. Pour in the sweet chili sauce, pineapple juice, soy sauce, and rice vinegar. Stir to coat the chicken evenly.
  6. Add the pineapple chunks and cook for 2 to 3 more minutes until everything is heated through and well combined.
  7. Taste and adjust seasoning if needed. Garnish with scallions if desired and serve immediately.
