Description
This gooey baked vegan brie is rich, creamy, and packed with savory flavor, made entirely from plant-based ingredients. It bakes to a soft, stretchy center with a lightly golden, herbed top.
Ingredients
- 1 cup raw cashews
- 6 cloves garlic, divided
- 1 1/2 cups water
- 1/4 cup tapioca powder
- 2 tbsp tahini
- 2 tbsp nutritional yeast
- 4 tsp apple cider vinegar
- 1 1/2 tsp fine sea salt
- 1 tsp white miso
- 1 tbsp fresh thyme leaves
Instructions
- Soak the cashews in boiling water for 1 hour, then drain. Alternatively, soak in room-temperature water for at least 6 hours or overnight, then drain.
- Preheat the oven to 350°F (180°C).
- Chop 3 cloves of garlic and add to a high-speed blender with the soaked cashews, water, tapioca powder, tahini, nutritional yeast, apple cider vinegar, sea salt, and white miso. Blend until completely smooth.
- Pour the mixture into a 7 1/2 x 2-inch round baking dish.
- Thinly slice the remaining 3 garlic cloves and arrange on top. Sprinkle with fresh thyme leaves.
- Bake uncovered for 25 minutes, until the top forms a light skin and the edges are lightly browned. Serve warm and gooey.
Notes
- Add rosemary or sage for extra herb flavor.
- Sprinkle crushed red pepper flakes for a subtle heat.
- Drizzle olive oil on top before baking for added richness.
