Description

This gooey baked vegan brie is rich, creamy, and packed with savory flavor, made entirely from plant-based ingredients. It bakes to a soft, stretchy center with a lightly golden, herbed top.


Ingredients

  • 1 cup raw cashews
  • 6 cloves garlic, divided
  • 1 1/2 cups water
  • 1/4 cup tapioca powder
  • 2 tbsp tahini
  • 2 tbsp nutritional yeast
  • 4 tsp apple cider vinegar
  • 1 1/2 tsp fine sea salt
  • 1 tsp white miso
  • 1 tbsp fresh thyme leaves

Instructions

  1. Soak the cashews in boiling water for 1 hour, then drain. Alternatively, soak in room-temperature water for at least 6 hours or overnight, then drain.
  2. Preheat the oven to 350°F (180°C).
  3. Chop 3 cloves of garlic and add to a high-speed blender with the soaked cashews, water, tapioca powder, tahini, nutritional yeast, apple cider vinegar, sea salt, and white miso. Blend until completely smooth.
  4. Pour the mixture into a 7 1/2 x 2-inch round baking dish.
  5. Thinly slice the remaining 3 garlic cloves and arrange on top. Sprinkle with fresh thyme leaves.
  6. Bake uncovered for 25 minutes, until the top forms a light skin and the edges are lightly browned. Serve warm and gooey.

  • Sprinkle crushed red pepper flakes for a subtle heat.
