Ingredients

  • 4 large eggs
  • 2 cups diced cooked potatoes or frozen hash browns

Instructions

  1. In a skillet over medium heat, cook the meat until browned and fully cooked. Remove from skillet and set aside, leaving some fat in the pan.
  2. Add diced or frozen potatoes to the skillet. Cook for 8–10 minutes, stirring occasionally, until golden and crispy.
  3. Return the cooked meat to the skillet and stir to combine.
  4. Create small wells in the mixture and crack the eggs into each well.
  5. Cover the skillet and cook for 5–7 minutes, or until eggs are cooked to your desired doneness.
  6. Season with salt and pepper and serve immediately.
