Description
A quick and easy 4-ingredient pineapple chicken recipe with sweet and tangy flavors. Perfect for a weeknight meal that can be served with rice or vegetables.
Ingredients
4 chicken breasts (or thighs)
1 cup pineapple chunks (fresh or canned)
½ cup soy sauce
1 tbsp honey
Instructions
- In a large pan, heat a little oil over medium-high heat.
- Add the chicken breasts (or thighs) to the pan and cook until golden brown on both sides, about 6-8 minutes per side.
- While the chicken is cooking, in a small bowl, mix together the pineapple chunks, soy sauce, and honey.
- Once the chicken is browned, pour the pineapple mixture over the chicken in the pan.
- Cover and simmer on low heat for 10-15 minutes, or until the chicken is cooked through and has absorbed the flavors.
- Serve with rice or your choice of side dishes.
Notes
- Spicy Pineapple Chicken: Add a pinch of red pepper flakes or a small amount of chopped fresh chili to the sauce for a spicy kick.
- Grilled Pineapple Chicken: For a smoky flavor, grill the chicken and top it with the pineapple sauce just before serving.
- Vegetarian Option: Substitute the chicken with tofu or tempeh for a plant-based version.
- Add Veggies: Incorporate bell peppers, onions, or snap peas to the dish for added flavor and texture.
- If you prefer a less sweet version, reduce the amount of honey or use a sugar substitute like stevia.
- To make the recipe gluten-free, use tamari or coconut aminos instead of soy sauce.
- For a hands-off approach, cook the chicken and pineapple mixture in a slow cooker on low for 4-6 hours.
