Description
These 5-ingredient Chili Lime Drumsticks are an easy and flavorful meal perfect for weeknights or summer BBQs. Marinated in a zesty chili-lime mixture and baked to perfection, they deliver bold flavor with minimal effort.
Ingredients
- 8 chicken drumsticks (about 2 lbs)
- 1 tbsp avocado oil (or olive oil)
- 1 tbsp lime zest (from about 2 limes)
- 3 tbsp lime juice (freshly squeezed)
- 1 tbsp chili powder
- 1/2 tsp salt
Instructions
- In a large bowl or zip-top bag, combine the avocado oil, lime zest, lime juice, chili powder, and salt.
- Add the chicken drumsticks and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes or up to 24 hours.
- Preheat oven to 425°F (218°C). Line a baking sheet with parchment paper or foil and place a wire rack on top.
- Arrange the drumsticks on the rack in a single layer.
- Bake for 35–40 minutes, turning once halfway through, until the internal temperature reaches 165°F (74°C) and the skin is crispy and browned.
- Remove from oven and let rest for 5 minutes before serving.
Notes
- Marinate the chicken overnight for maximum flavor.
- These drumsticks can also be grilled instead of baked.
- Serve with a squeeze of fresh lime and your favorite side dishes.
