Description

These 5-ingredient Chili Lime Drumsticks are an easy and flavorful meal perfect for weeknights or summer BBQs. Marinated in a zesty chili-lime mixture and baked to perfection, they deliver bold flavor with minimal effort.


Ingredients

  • 8 chicken drumsticks (about 2 lbs)
  • 1 tbsp avocado oil (or olive oil)
  • 1 tbsp lime zest (from about 2 limes)
  • 3 tbsp lime juice (freshly squeezed)
  • 1 tbsp chili powder
  • 1/2 tsp salt

Instructions

  1. In a large bowl or zip-top bag, combine the avocado oil, lime zest, lime juice, chili powder, and salt.
  2. Add the chicken drumsticks and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes or up to 24 hours.
  3. Preheat oven to 425°F (218°C). Line a baking sheet with parchment paper or foil and place a wire rack on top.
  4. Arrange the drumsticks on the rack in a single layer.
  5. Bake for 35–40 minutes, turning once halfway through, until the internal temperature reaches 165°F (74°C) and the skin is crispy and browned.
  6. Remove from oven and let rest for 5 minutes before serving.

Notes

  • Marinate the chicken overnight for maximum flavor.
  • These drumsticks can also be grilled instead of baked.
