Description
Crispy air fryer breakfast potatoes tossed with peppers and onions, seasoned to perfection for a quick and satisfying morning side.
Ingredients
- 450 g (1 lb) floury potatoes, peeled and chopped into 1-inch cubes
- 2 tbsp oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 red bell pepper, chopped into 1-inch pieces
- 1 green bell pepper, chopped into 1-inch pieces
- 1 onion, peeled and chopped into 1-inch pieces
Instructions
- Place the potatoes, oil, salt, pepper, garlic powder, and paprika in a bowl and toss to coat evenly.
- Transfer the potatoes to the air fryer basket, reserving any remaining seasoned oil in the bowl. Air fry at 200C/400F for 10 minutes.
- Add the chopped peppers and onion to the same bowl and toss them in the remaining oil and seasoning.
- After 10 minutes, shake the air fryer basket, then add the peppers and onions. Shake again to distribute evenly.
- Continue cooking for another 10 minutes, shaking the basket halfway through.
- Check doneness by inserting a knife into a potato; it should slide in easily. Cook a few minutes longer if needed, then serve.
Notes
- For extra crispiness, avoid overcrowding the air fryer basket.
- Swap paprika for smoked paprika for a deeper flavor.
- Store leftovers in the refrigerator for up to 3 days and reheat in the air fryer.
- Serve with eggs, bacon, or as a breakfast burrito filling.
