Description

Crispy air fryer breakfast potatoes tossed with peppers and onions, seasoned to perfection for a quick and satisfying morning side.


Ingredients

  • 450 g (1 lb) floury potatoes, peeled and chopped into 1-inch cubes
  • 2 tbsp oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1 red bell pepper, chopped into 1-inch pieces
  • 1 green bell pepper, chopped into 1-inch pieces
  • 1 onion, peeled and chopped into 1-inch pieces

Instructions

  1. Place the potatoes, oil, salt, pepper, garlic powder, and paprika in a bowl and toss to coat evenly.
  2. Transfer the potatoes to the air fryer basket, reserving any remaining seasoned oil in the bowl. Air fry at 200C/400F for 10 minutes.
  3. Add the chopped peppers and onion to the same bowl and toss them in the remaining oil and seasoning.
  4. After 10 minutes, shake the air fryer basket, then add the peppers and onions. Shake again to distribute evenly.
  5. Continue cooking for another 10 minutes, shaking the basket halfway through.
  6. Check doneness by inserting a knife into a potato; it should slide in easily. Cook a few minutes longer if needed, then serve.

Notes

  • For extra crispiness, avoid overcrowding the air fryer basket.
  • Swap paprika for smoked paprika for a deeper flavor.
  • Store leftovers in the refrigerator for up to 3 days and reheat in the air fryer.
  • Serve with eggs, bacon, or as a breakfast burrito filling.
