Description
Crispy, cheesy lasagna rolls air-fried to golden perfection—this copycat of Olive Garden’s Lasagna Fritta combines indulgent flavors with a lighter cooking method for a delectable appetizer or main dish.
Ingredients
Lasagna noodles, cooked al dente
Ricotta cheese
Mozzarella cheese, shredded
Parmesan, Romano, Asiago cheeses (optional blend)
Eggs (for filling and breading)
All-purpose flour
Italian seasoning
Salt and pepper
Panko or Italian breadcrumbs
Olive oil spray
Marinara and/or Alfredo sauce, for serving
Instructions
- Boil noodles until al dente, drain, rinse with cold water, trim any ragged edges.
 - Mix ricotta, shredded cheeses, Italian seasoning, salt, pepper, and eggs to make the filling.
 - Lay noodles flat, spread filling, roll into 2–3” rolls. Freeze on a parchment-lined tray for 1 hour.
 - Prepare three stations—flour, beaten eggs, breadcrumbs. Dip rolls in each, shaking off excess.
 - Preheat air fryer to 400°F (205°C). Lightly spray basket with oil.
 - Arrange rolls in a single layer with space. Air fry for 8–10 minutes, flip, respray, then cook another 6–8 minutes until golden.
 - Plate warm rolls, drizzle with marinara or Alfredo, garnish with parsley and Parmesan.
 
Notes
- For variations, try adding spinach, ground meat, or a variety of cheeses to the filling.
 - For a vegan version, substitute plant-based cheeses, egg replacers, and gluten-free noodles/breadcrumbs.
 - Store leftovers in an airtight container in the fridge for up to 3 days.
 - Reheat by air frying or baking at 350°F (175°C) for 5–8 minutes to restore crispiness.
