Ingredients

  • 2 medium zucchini, thinly sliced
  • 1/2 cup breadcrumbs
  • 1/4 cup all-purpose flour
  • 1/2 cup unsweetened plant-based milk
  • 1/4 cup vegan parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking spray
  • 1/2 cup vegan mayonnaise
  • 1/4 cup fresh basil
  • 1 tablespoon lemon juice
  • 1 clove garlic

Instructions

  1. Slice the zucchini into thin rounds and set aside.
  2. Prepare three bowls: one with flour, one with plant-based milk, and one with breadcrumbs mixed with vegan parmesan, garlic powder, onion powder, salt, and pepper.
  3. Dip each zucchini slice into the flour, then the milk, and finally coat with the breadcrumb mixture.
  4. Place coated zucchini slices in a single layer in the air fryer basket and lightly spray with cooking spray.
  5. Air fry at 400°F for 8-10 minutes, flipping halfway through, until golden and crispy.
  6. To make the basil aioli, blend vegan mayonnaise, fresh basil, lemon juice, and garlic until smooth.
  7. Serve zucchini chips warm with basil aioli on the side.
