Ingredients
- 2 medium zucchini, thinly sliced
- 1/2 cup breadcrumbs
- 1/4 cup all-purpose flour
- 1/2 cup unsweetened plant-based milk
- 1/4 cup vegan parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Cooking spray
- 1/2 cup vegan mayonnaise
- 1/4 cup fresh basil
- 1 tablespoon lemon juice
- 1 clove garlic
Instructions
- Slice the zucchini into thin rounds and set aside.
- Prepare three bowls: one with flour, one with plant-based milk, and one with breadcrumbs mixed with vegan parmesan, garlic powder, onion powder, salt, and pepper.
- Dip each zucchini slice into the flour, then the milk, and finally coat with the breadcrumb mixture.
- Place coated zucchini slices in a single layer in the air fryer basket and lightly spray with cooking spray.
- Air fry at 400°F for 8-10 minutes, flipping halfway through, until golden and crispy.
- To make the basil aioli, blend vegan mayonnaise, fresh basil, lemon juice, and garlic until smooth.
- Serve zucchini chips warm with basil aioli on the side.
