Description
Aloo Tikki are spiced Indian potato croquettes that are crispy on the outside and soft inside, made with mashed potatoes, spices, and herbs. Perfect as a snack or appetizer, they can be pan-fried or deep-fried.
Ingredients
- 4 medium potatoes (about 500g), boiled and mashed
- 1 tsp grated ginger
- 2 green chilies, finely chopped
- 2 tbsp finely chopped fresh coriander leaves
- 1 tsp roasted cumin powder
- 1 tsp garam masala
- 1 tsp dry mango powder (amchur) or lemon juice
- Salt to taste
- 3 tbsp cornflour (or all-purpose flour)
- Oil for shallow frying
Instructions
- Boil the potatoes until tender. Peel and mash them while still warm.
- Add grated ginger, green chilies, coriander leaves, cumin powder, garam masala, dry mango powder (or lemon juice), and salt to the mashed potatoes. Mix well.
- Add cornflour to the mixture to help bind the tikkis. Mix thoroughly to form a smooth dough.
- Divide the mixture into equal portions and shape them into round, flat patties.
- Heat oil in a frying pan over medium heat.
- Fry the tikkis in batches until both sides are golden brown and crispy. Drain on paper towels.
- Serve hot with chutney or ketchup.
Notes
- Ensure there is no moisture in the mashed potatoes to keep tikkis crispy.
- You can use rice flour instead of cornflour for binding.
- For extra flavor, add a pinch of chaat masala before serving.
- These can also be air-fried or baked for a healthier version.
