This Quick Chicken Skillet is a fast and flavorful one-pan dinner featuring tender chicken breasts, sautéed vegetables, and a light garlic herb sauce—perfect for busy weeknights.
Ingredients
- 2 large boneless, skinless chicken breasts, sliced into strips
- 2 tbsp olive oil
- 1 bell pepper, sliced
- 1 small zucchini, sliced
- 1/2 red onion, sliced
- 2 cloves garlic, minced
- 1/2 tsp dried Italian seasoning
- Salt and pepper, to taste
- Juice of 1/2 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add chicken strips, season with salt, pepper, and Italian seasoning, and cook for 5–6 minutes until golden and cooked through. Remove from skillet and set aside.
- Add remaining 1 tablespoon olive oil to the skillet.
- Add bell pepper, zucchini, and red onion. Sauté for 4–5 minutes until vegetables are tender-crisp.
- Add minced garlic and cook for 1 more minute until fragrant.
- Return the cooked chicken to the skillet and toss to combine with vegetables.
- Drizzle with lemon juice, stir well, and cook for an additional 1–2 minutes.
- Garnish with fresh parsley and serve warm.

- Serve over rice, pasta, or quinoa for a complete meal.
- Swap in your favorite vegetables or use frozen stir-fry mix in a pinch.
- Add a pinch of red pepper flakes for a spicy kick.
