Amazing Cheesy Taco Soup is a one-bowl wonder — rich, creamy, and packed with bold Tex-Mex flavors. Made with seasoned ground beef, beans, corn, and melty cheese, this hearty soup is perfect for any night of the week.
Ingredients
- 1 lb ground beef
 - 1 small onion, diced
 - 2 cloves garlic, minced
 - 1 can (15 oz) diced tomatoes
 - 1 can (10 oz) Rotel (diced tomatoes with green chilies)
 - 1 can (15 oz) black beans, drained and rinsed
 - 1 can (15 oz) corn, drained
 - 1 packet taco seasoning
 - 1 block (8 oz) cream cheese, cubed and softened
 - 2 cups shredded cheddar cheese
 - 2 cups beef broth
 - Salt and pepper, to taste
 - Optional toppings: sour cream, tortilla chips, green onions, jalapeños
 
Instructions
- In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess grease.
 - Add diced onion and garlic, sauté for 3–4 minutes until softened.
 - Stir in diced tomatoes, Rotel, black beans, corn, taco seasoning, and beef broth. Mix well.
 - Bring the soup to a simmer and cook for 10–15 minutes to blend flavors.
 - Add cream cheese and stir until melted and fully incorporated.
 - Stir in shredded cheddar cheese until melted and soup is creamy.
 - Season with salt and pepper to taste.
 - Serve hot with your favorite toppings like sour cream, tortilla chips, or jalapeños.
 
Notes
- For a spicier version, use hot Rotel or add cayenne pepper.
 - Ground turkey or chicken can be used instead of beef.
 - This soup stores well and makes great leftovers.
