Ingredients
- 5 cups fresh peaches, peeled and sliced
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup cornstarch
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp lemon juice
- 1/8 tsp salt
- 1 tbsp butter
- 1 egg (for egg wash)
- 1 tbsp water (for egg wash)
- 1 double pie crust (store-bought or homemade)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, lemon juice, and salt. Mix gently until peaches are well coated.
- Roll out one pie crust and place it into a 9-inch pie dish.
- Pour the peach filling into the crust and dot with small pieces of butter.
- Roll out the second crust and place it over the filling. You can create a lattice top or cover completely and cut slits to vent.
- Trim and crimp the edges to seal the pie.
- In a small bowl, whisk together the egg and water to make an egg wash. Brush the top crust with the egg wash.
- Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
- If the crust begins to brown too quickly, cover the edges with foil halfway through baking.
- Allow the pie to cool completely before serving to let the filling set.
Notes
- Use ripe but firm peaches for the best texture.
- To peel peaches easily, blanch them in boiling water for 30 seconds, then transfer to an ice bath.
- Letting the pie cool completely helps the filling thicken properly.
- Serve with vanilla ice cream for an extra treat.
