Description
A vibrant and hearty Antipasto Chickpea Salad loaded with Mediterranean flavors, featuring chickpeas, salami, mozzarella, olives, and a zesty Italian dressing. Perfect as a main dish or side, it’s quick to prepare and packed with protein.
Ingredients
- 2 x 400g / 14 oz cans chickpeas, drained
- 1 cup cherry tomatoes, halved
- 3/4 cup red capsicum/bell pepper, chopped
- 1/2 cup green capsicum/bell pepper, chopped
- 1 cup diced salami
- 1 cup small mozzarella balls (bocconcini), halved
- 1/2 cup pitted black olives, halved
- 1/2 cup marinated artichokes, chopped
- 1/4 cup red onion, finely sliced
- 2 tbsp parsley, finely chopped
- 1 tbsp basil, finely chopped (optional)
- Salt and pepper, to taste
- Dressing:
- 3 tbsp red wine vinegar
- 6 tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- 1/2 tsp dried oregano
- 1/4 tsp sugar
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Prepare the dressing by combining red wine vinegar, olive oil, Dijon mustard, minced garlic, oregano, sugar, salt, and pepper in a jar. Shake well to mix.
- In a large bowl, combine the chickpeas, cherry tomatoes, red and green capsicum, salami, mozzarella balls, olives, artichokes, red onion, parsley, and basil.
- Pour the dressing over the salad ingredients.
- Toss everything gently to combine and coat evenly with the dressing.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes to let the flavors meld before serving.
