Description

A vibrant and hearty Antipasto Chickpea Salad loaded with Mediterranean flavors, featuring chickpeas, salami, mozzarella, olives, and a zesty Italian dressing. Perfect as a main dish or side, it’s quick to prepare and packed with protein.


Ingredients

  • 2 x 400g / 14 oz cans chickpeas, drained
  • 1 cup cherry tomatoes, halved
  • 3/4 cup red capsicum/bell pepper, chopped
  • 1/2 cup green capsicum/bell pepper, chopped
  • 1 cup diced salami
  • 1 cup small mozzarella balls (bocconcini), halved
  • 1/2 cup pitted black olives, halved
  • 1/2 cup marinated artichokes, chopped
  • 1/4 cup red onion, finely sliced
  • 2 tbsp parsley, finely chopped
  • 1 tbsp basil, finely chopped (optional)
  • Salt and pepper, to taste
  • Dressing:
  • 3 tbsp red wine vinegar
  • 6 tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp sugar
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Prepare the dressing by combining red wine vinegar, olive oil, Dijon mustard, minced garlic, oregano, sugar, salt, and pepper in a jar. Shake well to mix.
  2. In a large bowl, combine the chickpeas, cherry tomatoes, red and green capsicum, salami, mozzarella balls, olives, artichokes, red onion, parsley, and basil.
  3. Pour the dressing over the salad ingredients.
  4. Toss everything gently to combine and coat evenly with the dressing.
  5. Season with salt and pepper to taste.
  6. Refrigerate for at least 30 minutes to let the flavors meld before serving.
