Description

This Apple Cheesecake combines a creamy, classic cheesecake base with a cinnamon-spiced apple topping and a buttery graham cracker crust, making it a perfect fall dessert.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 4 (8 oz) packages cream cheese, room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup sour cream
  • 2 large apples, peeled and chopped
  • 2 tablespoons butter
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons light brown sugar

Instructions

  1. Preheat oven to 325°F. Lightly coat a 9-inch springform pan with nonstick spray.
  2. In a medium bowl, mix graham cracker crumbs and melted butter until evenly combined. Press the mixture into the bottom of the prepared pan. Set aside.
  3. In the bowl of a stand mixer, beat the cream cheese until smooth and creamy. Add sugar and vanilla and mix until combined.
  4. Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
  5. Mix in the sour cream until smooth.
  6. Pour the cheesecake batter over the prepared crust and smooth the top.
  7. Bake for 55–60 minutes, or until the center is set. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
  8. While the cheesecake is cooling, prepare the apple topping: In a medium skillet, melt butter over medium heat. Add chopped apples, cinnamon, and brown sugar. Cook until apples are soft and caramelized, about 10 minutes. Let cool.
  9. Once the cheesecake has cooled completely, spoon the apple topping over the top.
  10. Refrigerate the cheesecake for at least 4 hours or overnight before serving.

Notes
