These Apple Cinnamon Breakfast Bars are a wholesome and delicious grab-and-go breakfast option made with oats, apples, and warm spices. Perfect for busy mornings or a healthy snack.
Ingredients
- 2 cups old-fashioned oats
- 1/2 cup almond flour
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp melted coconut oil
- 1 cup peeled and finely chopped apple (about 1 medium apple)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease lightly.
- In a large bowl, mix oats, almond flour, cinnamon, nutmeg, salt, and baking soda.
- In another bowl, whisk together applesauce, maple syrup, egg, vanilla extract, and melted coconut oil until smooth.
- Combine wet ingredients with dry ingredients and mix until fully incorporated.
- Fold in the chopped apple.
- Pour the mixture into the prepared baking pan and spread evenly.
- Bake for 25–30 minutes or until the top is golden brown and a toothpick comes out clean from the center.
- Let cool completely in the pan before slicing into bars.
Notes
- Store bars in an airtight container in the fridge for up to 5 days.
- Use any sweet, firm apple like Fuji or Honeycrisp.
- Bars can be frozen for up to 3 months—wrap individually for easy thawing.
