Ingredients
- 1 1/2 cups whole wheat flour
- 1/2 cup rolled oats
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/4 tsp nutmeg
- 2 eggs
- 1/2 cup plain Greek yogurt
- 1/4 cup honey
- 1/4 cup brown sugar
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1 1/2 cups peeled and chopped apples (about 2 medium apples)
Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
- In a large bowl, mix whole wheat flour, rolled oats, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together eggs, Greek yogurt, honey, brown sugar, melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the chopped apples.
- Divide the batter evenly among the muffin cups.
- Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
