- 1/2 cup butter, softened
- 2 eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
- 1 apple, peeled and chopped
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a small bowl, mix together the brown sugar and cinnamon. Set aside.
- In a large bowl, cream together the white sugar and butter until smooth and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, combine the flour and baking powder. Add this to the creamed mixture and mix well.
- Stir in the milk until the batter is smooth.
- Pour half the batter into the prepared pan. Top with half the chopped apples and half the brown sugar-cinnamon mixture.
- Repeat with the remaining batter, apples, and cinnamon mixture. Lightly press the topping into the batter.
- Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use a tart apple like Granny Smith for a better contrast in flavor.
- You can add chopped nuts like walnuts or pecans for added crunch.
- This loaf tastes even better the next day as the flavors meld together.
