Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 large egg
  • 1 1/4 cups milk
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons melted butter
  • 1 apple, peeled and grated
  • Butter or oil for greasing the pan
  • Optional toppings: syrup, powdered sugar, extra apple slices

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  2. In another bowl, whisk together egg, milk, vanilla, and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Gently fold in the grated apple.
  5. Preheat a skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake.
  7. Cook for 2-3 minutes or until bubbles form on the surface and edges look set. Flip and cook another 1-2 minutes until golden and cooked through.
  8. Serve warm with your favorite toppings.
