This Apple Crisp Cheesecake combines creamy cheesecake with a spiced apple filling and a crunchy oat topping, all nestled in a buttery graham cracker crust – a perfect fall dessert blending two classic favorites.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 3 apples, peeled, cored, and thinly sliced
- 1/4 cup granulated sugar (for apples)
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup old-fashioned oats
- 1/3 cup all-purpose flour
- 1/3 cup brown sugar
- 1/4 cup unsalted butter, melted (for topping)
Instructions
- Preheat oven to 325°F (163°C). Prepare a 9-inch springform pan with parchment paper and lightly grease the sides.
- Mix graham cracker crumbs with melted butter and press into the bottom of the pan to form the crust. Bake for 10 minutes, then set aside to cool.
- In a large bowl, beat cream cheese until smooth. Add granulated sugar and mix until combined. Add eggs one at a time, mixing well after each. Mix in vanilla extract and sour cream until smooth.
- Pour the cheesecake mixture over the cooled crust.
- In a separate bowl, toss sliced apples with 1/4 cup sugar, cinnamon, and nutmeg. Layer the apple mixture evenly over the cheesecake batter.
- In another bowl, mix oats, flour, brown sugar, and melted butter until crumbly. Sprinkle evenly over the apples.
- Bake for 60–70 minutes, or until the center is just set. If the topping browns too quickly, tent with foil during the last 20 minutes.
- Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly open. Then chill in the fridge for at least 4 hours or overnight before serving.
