Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 apples, peeled, cored, and thinly sliced
  • 1/4 cup granulated sugar (for apples)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup old-fashioned oats
  • 1/3 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup unsalted butter, melted (for topping)

Instructions

  1. Preheat oven to 325°F (163°C). Prepare a 9-inch springform pan with parchment paper and lightly grease the sides.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of the pan to form the crust. Bake for 10 minutes, then set aside to cool.
  3. In a large bowl, beat cream cheese until smooth. Add granulated sugar and mix until combined. Add eggs one at a time, mixing well after each. Mix in vanilla extract and sour cream until smooth.
  4. Pour the cheesecake mixture over the cooled crust.
  5. In a separate bowl, toss sliced apples with 1/4 cup sugar, cinnamon, and nutmeg. Layer the apple mixture evenly over the cheesecake batter.
  6. In another bowl, mix oats, flour, brown sugar, and melted butter until crumbly. Sprinkle evenly over the apples.
  7. Bake for 60–70 minutes, or until the center is just set. If the topping browns too quickly, tent with foil during the last 20 minutes.
  8. Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly open. Then chill in the fridge for at least 4 hours or overnight before serving.
