Description

A warm, naturally sweet apple crisp with a crunchy nut topping, perfect for a quick and healthy dessert. This paleo, vegan, and gluten-free treat is rich in flavor and texture.


Ingredients

  • 3 tablespoons (30g) pecans
  • 2 tablespoons (25g) macadamia nuts
  • 3 tablespoons (35g) cashews
  • 2 tablespoons (10g) unsweetened shredded coconut
  • 2 tablespoons (13g) golden flaxseed meal
  • 2 teaspoons (15g) cacao nibs
  • ⅛ teaspoon fine Himalayan salt
  • 2 tablespoons (26g) coconut oil, melted (or butter)
  • 2 tablespoons maple syrup (or raw honey)
  • ½ teaspoon ground cinnamon
  • 2 medium (125g) apples, diced (about 2 cups)

Instructions

  1. Grind the cashews into a fine powder using a food processor or blender, then transfer to a large bowl.
  2. Coarsely chop the pecans and macadamia nuts, then add them to the bowl with the cashews.
  3. Add shredded coconut, flaxseed meal, cacao nibs, and salt. Mix in 1 tablespoon of coconut oil and 1 tablespoon of maple syrup until the mixture becomes moist and crumbly. Set aside.
  4. In a medium saucepan, combine the remaining coconut oil, maple syrup, cinnamon, and diced apples. Cook over medium heat, stirring frequently, for 5–10 minutes until apples soften and caramelize.
  5. Press about 1 tablespoon of the crumb mixture into the bottom of each of four ramekins. Add the cooked apples, then spoon any remaining sauce over the top. Finish with more crumb mixture.
  6. Broil for about 2 minutes until the top is lightly browned. Let cool for 5 minutes before serving.

Notes

  • Swap maple syrup with honey if not strictly vegan.
  • Watch closely while broiling to prevent burning.
  • Serve warm as is or with a dairy-free ice cream.
  • Store leftovers in the refrigerator for up to 3 days.
