Ingredients
2 medium apples, peeled and diced
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 large egg
1/4 cup milk
1/2 teaspoon vanilla extract
Vegetable oil for frying
1/2 cup granulated sugar (for coating)
1 teaspoon ground cinnamon (for coating)
Instructions
-
Peel and dice the apples into small pieces and set them aside.
-
In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
-
In another bowl, beat the egg, then add the milk and vanilla extract. Stir to combine.
-
Gradually add the wet ingredients to the dry ingredients and mix until just combined (the batter will be thick).
-
Fold the diced apples into the batter.
-
Heat about 2 inches of vegetable oil in a deep skillet or pot over medium heat, aiming for 350°F (175°C).
-
Using a spoon or cookie scoop, drop spoonfuls of the batter into the hot oil, frying in batches to avoid overcrowding the pan.
-
Fry the fritter bites for 2-3 minutes per side, until golden brown and crispy. Remove from oil and drain on paper towels.
-
In a small bowl, mix the granulated sugar and cinnamon for the coating.
-
While still warm, roll the fritter bites in the cinnamon-sugar mixture until well coated.
-
Serve immediately and enjoy!
