Ingredients
- Nonstick cooking spray (for the pan)
- 1/3 cup light brown sugar
- 2 tsp ground cinnamon
- 2 apples (any kind), peeled and chopped
- 2/3 cup + 2 tbsp granulated sugar
- 1/2 cup (1 stick) butter, softened
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 tsp baking powder
- 1/2 cup + 1–3 tbsp milk or almond milk
- 1/2 cup powdered sugar
- Salt to taste
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with nonstick cooking spray.
- In a small bowl, mix brown sugar and cinnamon. Toss the chopped apples in 2 tablespoons of granulated sugar and set aside.
- In a large mixing bowl, cream butter and remaining sugar until light and fluffy. Add eggs, one at a time, mixing well after each. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and a pinch of salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
- Spread half of the batter in the prepared loaf pan. Sprinkle half of the cinnamon-sugar over it, followed by half of the apples. Repeat with the remaining batter, cinnamon-sugar, and apples.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool for 10 minutes in the pan, then transfer to a wire rack to cool completely. Mix powdered sugar with enough milk to drizzle, then drizzle the glaze over the bread.
