Description

Ingredients

  • 1 cup white whole wheat flour or regular whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg
  • 2 eggs
  • ¾ cup milk of choice
  • ½ cup unsweetened applesauce
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 apple, peeled or unpeeled, grated (about 1 cup)
  • Butter or oil for greasing the skillet

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  2. In another bowl, beat the eggs. Add the milk, applesauce, maple syrup (or honey), and vanilla. Whisk to combine.
  3. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the grated apple.
  4. Let the batter rest for 5 minutes while you preheat a skillet over medium heat. Lightly grease the skillet with butter or oil.
  5. Scoop ¼ cup of batter for each pancake onto the skillet. Cook for 2 to 3 minutes, until bubbles form on the surface and the edges look set. Flip and cook for another 1 to 2 minutes, until golden and cooked through.
  6. Repeat with remaining batter, greasing the skillet as needed. Serve warm with your favorite toppings.
