Ingredients
- 2 cups old-fashioned oats
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 tsp ground nutmeg
- 1/8 tsp ground allspice
- 1 3/4 cups milk
- 1/4 cup maple syrup
- 1 large egg
- 2 tbsp canola oil (or other neutral oil)
- 1 tsp vanilla extract
- 1 1/2 cups peeled, chopped apple (about 1 large apple)
- 1/4 cup old-fashioned oats (for streusel)

Instructions
- Preheat oven to 350°F. Lightly spray an 8×8 or 9×9 inch baking dish with non-stick cooking spray.
- In a large bowl, whisk together oats, brown sugar, baking powder, cinnamon, salt, nutmeg, and allspice.
- In a separate bowl, whisk together milk, maple syrup, egg, oil, and vanilla extract.
- Add wet ingredients to dry ingredients and stir until just combined. Gently stir in chopped apples.
- Spread mixture evenly into prepared baking dish.
- In a small bowl, stir together oats, brown sugar, flour, and cinnamon for the streusel topping. Add melted butter and stir until mixture resembles coarse crumbs.
- Sprinkle streusel evenly over the oatmeal mixture.
- Bake for 35–40 minutes or until the top is golden brown and center is set.
- Remove from oven and let cool for 10 minutes before serving. Serve warm as is or with milk or yogurt.
