Description

Ingredients

  • 2 cups old-fashioned oats
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground allspice
  • 1 3/4 cups milk
  • 1/4 cup maple syrup
  • 1 large egg
  • 2 tbsp canola oil (or other neutral oil)
  • 1 tsp vanilla extract
  • 1 1/2 cups peeled, chopped apple (about 1 large apple)
  • 1/4 cup old-fashioned oats (for streusel)
  • 2 tbsp brown sugar (for streusel)
  • 1 tbsp flour (for streusel)
  • 1/4 tsp ground cinnamon (for streusel)
  • 1 tbsp butter, melted (for streusel)

Instructions

  1. Preheat oven to 350°F. Lightly spray an 8×8 or 9×9 inch baking dish with non-stick cooking spray.
  2. In a large bowl, whisk together oats, brown sugar, baking powder, cinnamon, salt, nutmeg, and allspice.
  3. In a separate bowl, whisk together milk, maple syrup, egg, oil, and vanilla extract.
  4. Add wet ingredients to dry ingredients and stir until just combined. Gently stir in chopped apples.
  5. Spread mixture evenly into prepared baking dish.
  6. In a small bowl, stir together oats, brown sugar, flour, and cinnamon for the streusel topping. Add melted butter and stir until mixture resembles coarse crumbs.
  7. Sprinkle streusel evenly over the oatmeal mixture.
  8. Bake for 35–40 minutes or until the top is golden brown and center is set.
  9. Remove from oven and let cool for 10 minutes before serving. Serve warm as is or with milk or yogurt.
