Description
These apricot stuffing balls are a delicious vegetarian side dish, combining sweet dried apricots with savory mushrooms and herbs. Perfectly golden and crisp on the outside, they make a flavorful addition to any meal.
Ingredients
- 100 g mushrooms
- 100 g dried apricots
- 1 onion
- 75 g breadcrumbs
- 1 lemon zest
- 1 tsp mixed herbs
- 1 egg
- 1 pinch salt
- 1 pinch pepper
- 2 tbsp olive oil
Instructions
- Chop the mushrooms and finely chop the onion.
- Heat a small amount of olive oil in a pan and gently cook the mushrooms and onion until soft.
- Cut the dried apricots into small pieces.
- Place the breadcrumbs in a bowl and add the lemon zest, chopped apricots, cooked onion and mushrooms, mixed herbs, salt, and pepper. Mix well.
- Add the egg and mix again until combined.
- Divide the mixture into ten portions and shape each into a ball.
- Preheat the oven to 200°C (400°F, gas mark 6).
- Place the stuffing balls in a roasting tin with the remaining olive oil and roast for about 20 minutes, turning occasionally, until lightly golden.
Notes
- Use fresh breadcrumbs for a softer texture or dried for a firmer result.
- Chop apricots finely for better distribution of sweetness.
- These can be made ahead and refrigerated before baking.
- Serve alongside roast vegetables or a festive meal.
