Ingredients
- 1 kg lamb
- 800 g potatoes
- 80 ml olive oil
- 60 ml lemon juice
- 4 cloves garlic
- 1 tbsp oregano
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp rosemary
Instructions
- Preheat oven to 180°C.
- Place the lamb in a large roasting pan.
- Arrange the potatoes around the lamb.
- Drizzle olive oil and lemon juice over the lamb and potatoes.
- Add garlic cloves, oregano, and rosemary.
- Season everything with salt and black pepper.
- Mix the potatoes well with the juices in the pan.
- Roast for about 2 hours, or until the lamb is tender and potatoes are golden.
- Serve hot with the roasted potatoes.

- Cut potatoes evenly to ensure consistent cooking.
