Description

A comforting bowl of aromatic ginger garlic chicken noodle soup filled with tender chicken, hearty noodles, and a flavorful broth infused with fresh ginger and garlic. Perfect for cozy nights or when you need a nourishing, soothing meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken breast
  • 6 ounces egg noodles
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 3–4 minutes until softened.
  2. Add minced garlic and grated ginger, cooking for 1 minute until fragrant.
  3. Stir in sliced carrots and celery and cook for another 3–4 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add egg noodles and cook according to package instructions until tender.
  6. Stir in shredded chicken and soy sauce. Simmer for 3–5 minutes until heated through.
  7. Season with salt and black pepper to taste.
  8. Remove from heat and garnish with sliced green onions and fresh parsley before serving.

Notes

  • You can substitute rice noodles for egg noodles if preferred.
  • Add a squeeze of fresh lemon juice for extra brightness.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • If making ahead, cook noodles separately to prevent them from becoming too soft.
