Description

Asopao de Mariscos is a hearty Puerto Rican seafood stew, rich with a tomato-based broth, rice, and a mix of fresh seafood like shrimp, squid, and clams. It’s a comforting dish perfect for gatherings or a cozy dinner.


Ingredients

  • 200 gr of clams
  • 200 gr of squid rings
  • 200 gr of shrimp
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 garlic cloves, minced
  • 1 tomato, chopped
  • 1 tbsp of tomato paste
  • 1 tsp of paprika
  • 1 tsp of cumin
  • 1 tsp of oregano
  • 1 bay leaf
  • 1 cup of rice
  • 4 cups of fish broth or water with fish bouillon
  • 2 tbsp of olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, bell pepper, and garlic. Sauté until softened.
  2. Add chopped tomato and tomato paste. Cook for a few minutes until the tomato breaks down.
  3. Stir in paprika, cumin, oregano, and bay leaf. Cook for 1-2 minutes to release flavors.
  4. Add the rice and stir to coat with the sofrito mixture.
  5. Pour in the fish broth and bring to a boil. Reduce heat and simmer for about 10-15 minutes.
  6. Add the clams, squid rings, and shrimp. Cook for another 10-15 minutes, or until the seafood is cooked and rice is tender.
  7. Season with salt and pepper to taste. Remove bay leaf.
  8. Serve hot, garnished with fresh cilantro if desired.

Notes

  • You can use any seafood mix available to you.
  • Adjust the broth amount for a soupier or thicker consistency.
  • Fresh cilantro adds brightness at the end but is optional.
  • For a spicier version, add a bit of chili or hot sauce.
