Ingredients

  • 2 ripe avocados, peeled and pitted
  • 1/2 cup dark chocolate chips (or 70% cocoa chocolate)
  • 1/4 cup almond milk (or milk of choice)
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Melt the dark chocolate chips in a heatproof bowl over a double boiler, or microwave in 20-second intervals, stirring between each interval, until fully melted and smooth.
  2. In a blender or food processor, combine the melted chocolate, avocados, almond milk, maple syrup or honey, vanilla extract, and a pinch of salt.
  3. Blend until smooth and creamy, scraping down the sides as needed.
  4. Taste and adjust sweetness, adding more maple syrup or honey if desired.
  5. Scoop the mousse into serving dishes and refrigerate for at least 1 hour to set and chill.
  6. Serve chilled with toppings like berries, coconut flakes, or whipped cream if desired.
