Description

Ingredients

  • 3 cups corn (fresh, canned, or frozen and thawed)
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the corn by cooking if needed, then allow it to cool completely.
  2. Dice the avocados and halve the cherry tomatoes.
  3. Finely chop the red onion and cilantro.
