Ingredients
- 1 teaspoon butter
- 2 eggs
- 2 slices multigrain bread
- 1 ripe avocado, pitted and peeled
- 1 teaspoon lemon juice, or to taste
- 1 pinch cayenne pepper
- Sea salt to taste
- Ground black pepper to taste
Instructions
- Melt butter in a skillet over medium-low heat. Crack eggs into the skillet side by side and cook until the whites are set, about 2 to 3 minutes. Flip eggs and cook until they reach desired doneness, about 2 to 5 minutes more.
- Meanwhile, toast bread slices to desired doneness, about 3 to 5 minutes.
- Mash avocado in a bowl and stir in lemon juice, cayenne pepper, and sea salt. Spread the avocado mixture evenly onto the toasted bread. Top each slice with a fried egg and season with additional sea salt and ground black pepper to taste.
Notes
- Use sourdough or whole wheat bread as an alternative to multigrain.
- Add sliced tomatoes or microgreens for extra freshness and texture.
- For a softer yolk, reduce the second cooking time slightly.
- Serve immediately for best flavor and texture.
