Description

Creamy mashed avocado spread over crispy multigrain toast and topped with a perfectly fried egg makes a quick and satisfying breakfast. Ready in just 15 minutes, this dish is flavorful, wholesome, and easy to prepare.

Ingredients

  • 1 teaspoon butter
  • 2 eggs
  • 2 slices multigrain bread
  • 1 ripe avocado, pitted and peeled
  • 1 teaspoon lemon juice, or to taste
  • 1 pinch cayenne pepper
  • Sea salt to taste
  • Ground black pepper to taste

Instructions

  1. Melt butter in a skillet over medium-low heat. Crack eggs into the skillet side by side and cook until the whites are set, about 2 to 3 minutes. Flip eggs and cook until they reach desired doneness, about 2 to 5 minutes more.
  2. Meanwhile, toast bread slices to desired doneness, about 3 to 5 minutes.
  3. Mash avocado in a bowl and stir in lemon juice, cayenne pepper, and sea salt. Spread the avocado mixture evenly onto the toasted bread. Top each slice with a fried egg and season with additional sea salt and ground black pepper to taste.

Notes

  • Use sourdough or whole wheat bread as an alternative to multigrain.
  • Add sliced tomatoes or microgreens for extra freshness and texture.
  • For a softer yolk, reduce the second cooking time slightly.
  • Serve immediately for best flavor and texture.
