Description

A wholesome baked apple oatmeal packed with nuts, seeds, and natural sweetness, perfect for a hearty breakfast or snack.


Ingredients

  • 2 cups rolled oats
  • 1 cup chopped walnuts (divided)
  • 1/3 cup ground chia seeds (or ground flaxseeds)
  • 1/4 cup hemp hearts
  • 2 tsp baking powder
  • 1 tsp fine sea salt
  • 1 tsp cinnamon
  • 1 cup grated apple (about 2 small apples)
  • 1/2 cup apple sauce
  • 1 1/2 cup almond milk
  • 1/3 cup maple syrup
  • 1/4 cup avocado oil
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 375F (190C). In an 8×11-inch baking dish, combine oats, 1/2 cup walnuts, ground chia seeds, hemp hearts, baking powder, salt, and cinnamon.
  2. In a separate bowl, whisk together grated apple, apple sauce, almond milk, maple syrup, avocado oil, and vanilla extract.
  3. Pour the wet ingredients into the dry mixture and stir to combine evenly.
  4. Top with remaining 1/2 cup walnuts and optional sliced apples.
  5. Bake for 30 minutes until edges are lightly browned and the center is set.
  6. Allow to cool for 10 minutes before slicing and serving.

Notes

  • Store leftovers in the refrigerator for up to 5 days.
  • Reheat in the microwave or oven before serving.
  • Swap walnuts with pecans or omit for a nut-free version.
  • Great served with extra almond milk or yogurt.
