Description

These baked blueberry donuts are a light, fluffy treat, bursting with sweet blueberries, offering a healthier twist on traditional fried donuts.


Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

2 tsp baking powder

½ tsp salt

1/4 tsp ground cinnamon

1/3 cup milk

1 large egg

2 tbsp unsalted butter, melted

1 tsp vanilla extract

1 cup fresh or frozen blueberries


Instructions

  1. Preheat the oven to 375°F (190°C). Grease a donut pan or lightly spray with non-stick cooking spray.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until fully combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
  5. Gently fold in the blueberries, being careful not to crush them.
  6. Spoon the batter into the donut pan, filling each mold about ¾ of the way full.
  7. Bake for 12-15 minutes or until a toothpick inserted into a donut comes out clean.
  8. Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  1. To make lemon blueberry donuts, add the zest of one lemon to the batter.
  2. For extra sweetness, drizzle the donuts with a simple glaze made of powdered sugar and milk after baking.
  3. For a vegan version, replace the egg with a flax egg and use plant-based milk and butter.
  4. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  5. Frozen blueberries can be used, but fold them in gently to avoid crushing them.
  6. If you don’t have a donut pan, use a muffin tin instead, adjusting the baking time as necessary.
