These Baked Blueberry Fritter Bites are a healthier twist on classic fritters, bursting with fresh blueberries and topped with a sweet vanilla glaze. Perfect for breakfast, brunch, or a light dessert.
Ingredients
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/3 cup milk
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp melted butter
- 1 cup fresh blueberries
- 1/2 cup powdered sugar (for glaze)
- 1–2 tsp milk (for glaze)
- 1/4 tsp vanilla extract (for glaze)
Instructions
- Preheat oven to 375°F (190°C) and grease a mini muffin tin.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk the milk, egg, vanilla, and melted butter.
- Combine the wet ingredients with the dry ingredients and stir until just combined.
- Gently fold in the blueberries.
- Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
- Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
- While bites are cooling, prepare the glaze by mixing powdered sugar, milk, and vanilla extract until smooth.
- Drizzle the glaze over the slightly cooled fritter bites.
- Serve warm or at room temperature.
Notes
- Do not overmix the batter to keep the bites fluffy.
- You can use frozen blueberries, but toss them in a little flour to prevent bleeding.
- Store in an airtight container for up to 2 days.
