Description

These Baked Blueberry Fritter Bites are a healthier twist on classic fritters, bursting with fresh blueberries and topped with a sweet vanilla glaze. Perfect for breakfast, brunch, or a light dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/3 cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp melted butter
  • 1 cup fresh blueberries
  • 1/2 cup powdered sugar (for glaze)
  • 12 tsp milk (for glaze)
  • 1/4 tsp vanilla extract (for glaze)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk the milk, egg, vanilla, and melted butter.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
  7. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  8. While bites are cooling, prepare the glaze by mixing powdered sugar, milk, and vanilla extract until smooth.
  9. Drizzle the glaze over the slightly cooled fritter bites.
  10. Serve warm or at room temperature.

Notes

  • Do not overmix the batter to keep the bites fluffy.
  • You can use frozen blueberries, but toss them in a little flour to prevent bleeding.
  • Store in an airtight container for up to 2 days.
