Description

Creamy, cheesy, and comforting baked feta potatoes made with baby potatoes, crumbled feta, garlic, and olive oil – a simple yet delicious side dish or vegetarian main.


Ingredients

  • 500g baby potatoes
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 100g feta cheese, crumbled
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Wash and halve the baby potatoes.
  3. In a large mixing bowl, toss the potatoes with olive oil, minced garlic, salt, and pepper until evenly coated.
  4. Spread the potatoes on a baking tray in a single layer.
  5. Roast in the oven for 30–35 minutes, turning halfway, until golden and crispy.
  6. Remove from the oven and immediately sprinkle the crumbled feta cheese over the hot potatoes.
  7. Return to the oven for 5 more minutes, allowing the feta to soften and melt slightly.
  8. Garnish with chopped fresh parsley if desired, and serve warm.

  • Use waxy potatoes like baby or new potatoes for best texture.
