Description

Deliciously sweet and nutty sandwich cookies inspired by traditional baklava, combining a spiced nut mixture and creamy mascarpone filling between sugar cookies.


Ingredients

  • 1 cup walnuts, finely chopped
  • 1/2 cup pistachios, finely chopped
  • 1/4 cup honey
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 cup melted butter
  • 1 package store-bought sugar cookies
  • 1 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix together the walnuts, pistachios, honey, cinnamon, and ground cloves until well combined.
  3. Brush the melted butter onto a baking sheet and spread the nut mixture evenly on top.
  4. Bake for 10-12 minutes, or until the nuts are toasted and fragrant. Remove from the oven and let cool.
  5. In another bowl, beat together the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
  6. Take one sugar cookie and spread a generous dollop of the mascarpone mixture on top.
  7. Sprinkle a spoonful of the nut mixture over the mascarpone and top with another sugar cookie to create a sandwich.
  8. Repeat with the remaining cookies and filling.
  9. Serve the sandwich cookies immediately or refrigerate for 30 minutes to allow the flavors to meld together.
