Ingredients
- 1 cup walnuts, finely chopped
- 1/2 cup pistachios, finely chopped
- 1/4 cup honey
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/4 cup melted butter
- 1 package store-bought sugar cookies
- 1 cup mascarpone cheese
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix together the walnuts, pistachios, honey, cinnamon, and ground cloves until well combined.
- Brush the melted butter onto a baking sheet and spread the nut mixture evenly on top.
- Bake for 10-12 minutes, or until the nuts are toasted and fragrant. Remove from the oven and let cool.
- In another bowl, beat together the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Take one sugar cookie and spread a generous dollop of the mascarpone mixture on top.
- Sprinkle a spoonful of the nut mixture over the mascarpone and top with another sugar cookie to create a sandwich.
- Repeat with the remaining cookies and filling.
- Serve the sandwich cookies immediately or refrigerate for 30 minutes to allow the flavors to meld together.
