Description

These Banana Bread Cookies combine the soft, moist texture of banana bread with the ease and portability of cookies. They are loaded with banana flavor and a hint of cinnamon, making them a delicious treat for any time of day.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mashed ripe banana (about 1 medium banana)
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, and mix until combined.
  4. Mix in the mashed banana.
  5. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the chopped walnuts if using.
  8. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10–12 minutes, or until the edges are lightly golden.
  10. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
