Description

This Banana Cream Pie is a classic dessert made with a flaky pie crust, layers of fresh bananas, rich and creamy homemade custard, and topped with whipped cream. It’s perfect for holidays, gatherings, or anytime you’re craving a nostalgic treat.


Ingredients

  • 1 (9-inch) pie crust, baked and cooled
  • 3 medium ripe bananas, sliced
  • 2/3 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 2 1/2 cups whole milk
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Prepare and bake the pie crust according to package directions or your favorite recipe. Allow it to cool completely.
  2. Layer the sliced bananas over the bottom of the cooled crust.
  3. In a medium saucepan, whisk together sugar, cornstarch, and salt. Slowly whisk in the milk over medium heat until smooth and fully combined.
  4. Cook the mixture, stirring constantly, until it begins to thicken and bubble. Reduce the heat to low.
  5. In a separate bowl, whisk the egg yolks. Slowly pour about 1/2 cup of the hot mixture into the yolks to temper them, then slowly whisk the yolk mixture back into the saucepan.
  6. Continue to cook for 2-3 more minutes until the custard is thick and smooth.
  7. Remove from heat and stir in the butter and vanilla extract until melted and incorporated.
  8. Pour the custard over the bananas in the pie crust and smooth the top. Cover with plastic wrap, pressing it directly onto the surface of the custard, and chill for at least 4 hours or until set.
  9. In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread over the chilled pie before serving.
  10. Optional: Garnish with additional banana slices or crushed vanilla wafers.

Notes

  • Use very ripe bananas for the best flavor.
  • Make sure the pie crust is fully cooled before adding bananas and custard.
  • Press plastic wrap directly on the custard to prevent skin from forming.
