Description
Banana French Toast Roll-Ups are a delicious twist on classic French toast, filled with sweet sautéed bananas and coated in cinnamon sugar for a crispy, golden treat.
Ingredients
- 10 slices sandwich bread
- 3 bananas, thinly sliced
- 3–4 tbsp butter
- 1 tbsp sugar (for sautéing bananas)
- 2 eggs
- 3 tbsp milk
- 1/3 cup sugar (for coating)
- 1/2 – 1 tsp cinnamon
- Powdered sugar (for dusting)
Instructions
- Heat a non-stick pan over medium heat and melt 1-1/2 tbsp of butter. Add the thinly sliced bananas and 1 tbsp of sugar. Sauté until golden and caramelized. Remove from heat and let cool slightly.
- In a small bowl, mix the remaining sugar (1/3 cup) with cinnamon and set aside for coating.
- In another bowl, beat the eggs with milk to make the egg wash.
- Remove the crusts from the bread slices and flatten each slice with a rolling pin.
- Spread 1-2 teaspoons of the banana mixture along one edge of each bread slice. Brush the opposite edge lightly with egg wash.
- Roll the bread tightly from the banana side, sealing the edge with the egg wash.
- Heat a pan over medium heat and melt 1 tbsp of butter. Dip each roll in the egg mixture, then place seam side down in the pan. Cook 3-4 rolls at a time, turning occasionally, until all sides are golden brown.
- Wipe the pan with a paper towel between batches and repeat until all rolls are cooked.
- Roll the warm French toast roll-ups in the cinnamon sugar mixture or dust with powdered sugar before serving.
- Serve warm and enjoy.
Notes
- You can substitute bananas with other fruits like strawberries or apples.
- For a richer flavor, add a splash of vanilla extract to the egg mixture.
- Best served immediately while warm and crispy.
