Description

Banana French Toast Roll-Ups are a delicious twist on classic French toast, filled with sweet sautéed bananas and coated in cinnamon sugar for a crispy, golden treat.


Ingredients

  • 10 slices sandwich bread
  • 3 bananas, thinly sliced
  • 34 tbsp butter
  • 1 tbsp sugar (for sautéing bananas)
  • 2 eggs
  • 3 tbsp milk
  • 1/3 cup sugar (for coating)
  • 1/21 tsp cinnamon
  • Powdered sugar (for dusting)

Instructions

  1. Heat a non-stick pan over medium heat and melt 1-1/2 tbsp of butter. Add the thinly sliced bananas and 1 tbsp of sugar. Sauté until golden and caramelized. Remove from heat and let cool slightly.
  2. In a small bowl, mix the remaining sugar (1/3 cup) with cinnamon and set aside for coating.
  3. In another bowl, beat the eggs with milk to make the egg wash.
  4. Remove the crusts from the bread slices and flatten each slice with a rolling pin.
  5. Spread 1-2 teaspoons of the banana mixture along one edge of each bread slice. Brush the opposite edge lightly with egg wash.
  6. Roll the bread tightly from the banana side, sealing the edge with the egg wash.
  7. Heat a pan over medium heat and melt 1 tbsp of butter. Dip each roll in the egg mixture, then place seam side down in the pan. Cook 3-4 rolls at a time, turning occasionally, until all sides are golden brown.
  8. Wipe the pan with a paper towel between batches and repeat until all rolls are cooked.
  9. Roll the warm French toast roll-ups in the cinnamon sugar mixture or dust with powdered sugar before serving.
  10. Serve warm and enjoy.

Notes

  • You can substitute bananas with other fruits like strawberries or apples.
  • For a richer flavor, add a splash of vanilla extract to the egg mixture.
