Description

A fresh and vibrant breakfast parfait layered with creamy vanilla Greek yogurt, sweet bananas, tart raspberries, and crunchy granola. This quick no-cook treat is perfect for a healthy breakfast or light snack.


Ingredients

  • 2 ripe bananas, sliced
  • 1 cup fresh raspberries
  • 2 cups vanilla Greek yogurt
  • 1 cup granola
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons chopped almonds (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a small bowl, stir the honey and vanilla extract into the Greek yogurt until smooth and well combined.
  2. Prepare two serving glasses or jars for layering the parfaits.
  3. Spoon a layer of the yogurt mixture into the bottom of each glass.
  4. Add a layer of sliced bananas followed by several raspberries.
  5. Sprinkle a layer of granola over the fruit.
  6. Repeat the layers of yogurt, bananas, raspberries, and granola until the glasses are filled.
  7. Top with extra raspberries, chopped almonds, and an additional drizzle of honey if desired.
  8. Garnish with fresh mint leaves and serve immediately.

Notes

  • For extra crunch, add the granola just before serving to keep it from softening.
  • Plain Greek yogurt can be used instead of vanilla for less sweetness.
  • Swap raspberries with strawberries, blueberries, or blackberries if preferred.
