Ingredients

For the Chicken:

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

  • 1 tbsp olive oil

  • Salt and pepper to taste

For the Bang Bang Sauce:

  • ½ cup mayonnaise

  • 2 tbsp sweet chili sauce

  • 1 tbsp sriracha (adjust to taste)

  • 1 tbsp honey (optional for sweetness)

For the Bowl:

  • 2 cups cooked white or jasmine rice

  • 1 cup shredded carrots

  • 1 cup shredded cabbage or coleslaw mix

  • 1 cucumber, thinly sliced

  • 2 green onions, chopped

  • Sesame seeds (optional, for garnish)

Instructions

  • Cook the Chicken:
In a large skillet over medium heat, heat olive oil. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through (about 6–8 minutes). Remove from heat.

  • Make the Sauce:
In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth and creamy.

  • Toss Chicken in Sauce:
Add the cooked chicken to the sauce and stir until fully coated.

  • Assemble the Bowls:
Divide rice into bowls. Top with the Bang Bang chicken, then add shredded carrots, cabbage, cucumber slices, and green onions.

  • Garnish and Serve:
Sprinkle with sesame seeds if desired and serve immediately.

Notes

  • Swap rice with cauliflower rice for a low-carb option.

  • Use rotisserie chicken to make this recipe even quicker.

  • You can make the Bang Bang sauce ahead of time and store it in the fridge for up to 5 days.

  • Want it spicier? Add extra sriracha to the sauce.
