Description

A hearty and flavorful beef enchilada casserole made with seasoned ground beef, enchilada sauce, tortillas, and plenty of melted cheese. This easy layered dinner is perfect for busy weeknights and delivers classic Mexican-inspired flavors in every bite.


Ingredients

  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (10 ounce) can red enchilada sauce
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (4 ounce) can diced green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 corn tortillas, cut into halves
  • 2 cups shredded Mexican blend cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain excess grease.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in enchilada sauce, diced tomatoes, green chilies, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  5. Spread a thin layer of the beef mixture on the bottom of the prepared baking dish.
  6. Layer tortillas over the beef mixture, followed by more beef mixture and a sprinkle of shredded cheeses.
  7. Repeat layers until all ingredients are used, finishing with cheese on top.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes, or until cheese is melted and bubbly.
  9. Let the casserole rest for 5 minutes before slicing. Garnish with chopped cilantro if desired and serve.
