These Baked Blueberry Fritter Bites are a healthier twist on traditional fritters, loaded with juicy blueberries and topped with a sweet vanilla glaze. Perfect for breakfast or a snack.
Ingredients
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/3 cup milk
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp melted butter
- 1 cup fresh blueberries
- 1/2 cup powdered sugar (for glaze)
- 1 tbsp milk (for glaze)
- 1/4 tsp vanilla extract (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin.
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, egg, vanilla, and melted butter until combined.
- Pour the wet ingredients into the dry and stir until just combined.
- Gently fold in the blueberries.
- Scoop the batter into the prepared mini muffin tin, filling each about 3/4 full.
- Bake for 12–15 minutes or until golden and a toothpick inserted comes out clean.
- While fritters bake, make the glaze by mixing powdered sugar, milk, and vanilla extract until smooth.
- Let fritter bites cool slightly, then drizzle with glaze before serving.
Notes
- Use fresh blueberries for best results; frozen may add extra moisture.
- Let fritters cool a few minutes before glazing to prevent melting.
- You can double the recipe for a larger batch.
