Description

These Baked Blueberry Fritter Bites are a healthier twist on traditional fritters, loaded with juicy blueberries and topped with a sweet vanilla glaze. Perfect for breakfast or a snack.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp melted butter
  • 1 cup fresh blueberries
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp milk (for glaze)
  • 1/4 tsp vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk milk, egg, vanilla, and melted butter until combined.
  4. Pour the wet ingredients into the dry and stir until just combined.
  5. Gently fold in the blueberries.
  6. Scoop the batter into the prepared mini muffin tin, filling each about 3/4 full.
  7. Bake for 12–15 minutes or until golden and a toothpick inserted comes out clean.
  8. While fritters bake, make the glaze by mixing powdered sugar, milk, and vanilla extract until smooth.
  9. Let fritter bites cool slightly, then drizzle with glaze before serving.

Notes

  • Use fresh blueberries for best results; frozen may add extra moisture.
  • Let fritters cool a few minutes before glazing to prevent melting.
