Description
A quick and easy baked egg tortilla that makes a perfect high-protein breakfast or brunch. Eggs are baked inside a tortilla with cheese and vegetables for a simple, healthy and delicious meal.
Ingredients
- 1 large flour tortilla
- 2 medium eggs
- 2 tablespoons milk
- 30 g (1/4 cup) grated cheddar cheese
- 1 small handful fresh spinach, chopped
- 6 cherry tomatoes, halved
- 1 spring onion, finely sliced
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Press the tortilla into a small oven-safe dish to form a bowl shape.
- Scatter the spinach, cherry tomatoes, and spring onion evenly over the base of the tortilla.
- Sprinkle the grated cheese on top of the vegetables.
- In a small bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture into the tortilla case over the fillings.
- Bake in the preheated oven for 15–18 minutes, or until the egg is set in the center.
- Remove from the oven, allow to cool slightly, slice, and serve.
Notes
- You can swap cheddar for feta, mozzarella, or any cheese you prefer.
- Add cooked bacon or sausage for a non-vegetarian option.
- For extra vegetables, add mushrooms, peppers, or courgette.
- Best served fresh, but leftovers can be stored in the fridge for up to 2 days.
