Description

A quick and easy baked egg tortilla that makes a perfect high-protein breakfast or brunch. Eggs are baked inside a tortilla with cheese and vegetables for a simple, healthy and delicious meal.


Ingredients

  • 1 large flour tortilla
  • 2 medium eggs
  • 2 tablespoons milk
  • 30 g (1/4 cup) grated cheddar cheese
  • 1 small handful fresh spinach, chopped
  • 6 cherry tomatoes, halved
  • 1 spring onion, finely sliced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Press the tortilla into a small oven-safe dish to form a bowl shape.
  3. Scatter the spinach, cherry tomatoes, and spring onion evenly over the base of the tortilla.
  4. Sprinkle the grated cheese on top of the vegetables.
  5. In a small bowl, whisk together the eggs, milk, salt, and pepper.
  6. Pour the egg mixture into the tortilla case over the fillings.
  7. Bake in the preheated oven for 15–18 minutes, or until the egg is set in the center.
  8. Remove from the oven, allow to cool slightly, slice, and serve.

Notes

  • You can swap cheddar for feta, mozzarella, or any cheese you prefer.
  • Add cooked bacon or sausage for a non-vegetarian option.
  • For extra vegetables, add mushrooms, peppers, or courgette.
  • Best served fresh, but leftovers can be stored in the fridge for up to 2 days.
