Description
This baked lemon garlic cod with butter sauce is light, flaky, and full of bright citrus flavor. Tender cod fillets are baked to perfection and finished with a rich garlic butter drizzle.
Ingredients
- 4 cod fillets (about 6 oz each)
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 lemon, sliced
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- Pat the cod fillets dry with paper towels and place them in the prepared baking dish.
- Season the fillets evenly with salt, pepper, and paprika.
- In a small bowl, mix the melted butter, minced garlic, lemon juice, and lemon zest.
- Pour the butter mixture evenly over the cod fillets.
- Top each fillet with lemon slices.
- Bake for 12–15 minutes, or until the fish flakes easily with a fork and is opaque throughout.
- Remove from the oven and spoon the pan juices over the fish. Garnish with fresh parsley before serving.
Notes
- For extra flavor, add a pinch of red pepper flakes to the butter mixture.
- Serve with steamed vegetables, rice, or a fresh green salad.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
- To prevent overcooking, check the fish at the 12-minute mark.
