Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 2 1/3 cups mashed overripe bananas (about 4–5 bananas)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon if using.
- In a large bowl, cream the butter and brown sugar together until light and fluffy.
- Beat in eggs one at a time, mixing well after each addition.
- Stir in mashed bananas and vanilla extract.
- Add the dry ingredients to the banana mixture and stir just until combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60–65 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from oven and allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Use overripe bananas for best flavor and moisture.
- Optional: Add 1/2 cup of chopped nuts or chocolate chips for extra texture.
- Banana bread can be stored at room temperature for up to 4 days or frozen for longer storage.
