Description

A delightful breakfast casserole made with French bread soaked in a rich egg mixture, topped with fresh strawberries and blueberries, then baked to golden perfection. Ideal for brunch or a make-ahead breakfast.

Ingredients

  • 1214 cups French bread, cubed
  • 8 large eggs
  • 2 cups 2% milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 1 cup sliced strawberries
  • 1/2 cup blueberries
  • 12 tablespoons powdered sugar (optional, for dusting)
  • Maple syrup (for serving)

Instructions

  1. Grease a 9″x13″ casserole dish with vegetable oil or butter.
  2. Place the cubed French bread into the casserole dish, filling it about three-quarters full.
  3. In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and brown sugar until well combined.
  4. Pour the egg mixture evenly over the bread cubes, ensuring all pieces are coated.
  5. Distribute the sliced strawberries and blueberries over the top of the casserole.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight.
  7. Preheat the oven to 350°F (175°C).
  8. Remove the plastic wrap and bake the casserole for 35-50 minutes, checking at the 35-minute mark. The casserole is done when the top is slightly crispy and the center is set.
  9. If desired, sprinkle powdered sugar over the top before serving.
  10. Serve warm with maple syrup.

Notes

  • For best results, use slightly stale or day-old French bread to better absorb the egg mixture.
  • This casserole can be prepared the night before and baked in the morning, making it ideal for brunch gatherings.
  • Feel free to substitute or add other berries such as raspberries or blackberries according to your preference.
  • Enjoy this comforting and flavorful Berry French Toast Casserole as a delightful start to your day!
