Description

Soft and chewy oatmeal breakfast bars packed with juicy blueberries and naturally sweetened with honey or maple syrup. A wholesome make-ahead breakfast or snack made with simple pantry ingredients.


Ingredients

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup unsweetened applesauce
  • 1/2 cup milk (dairy or non-dairy)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mix the rolled oats, whole wheat flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the applesauce, milk, egg, vanilla extract, and honey or maple syrup.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Spread the batter evenly into the prepared baking dish.
  7. Bake for 30–35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  8. Allow the bars to cool completely before slicing into squares.

Notes

  • If using frozen blueberries, add them directly from frozen to prevent excess bleeding into the batter.
  • For a gluten-free version, substitute the whole wheat flour with a gluten-free flour blend and ensure the oats are certified gluten-free.
  • Store bars in an airtight container in the refrigerator for up to 5 days.
  • These bars freeze well for up to 2 months; thaw overnight in the refrigerator.
