Description

Ingredients

  • 2 cups rolled oats
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter (or peanut butter)
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper or lightly grease it.
  2. In a large bowl, combine the rolled oats, almond flour, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk together the honey (or maple syrup), almond butter, applesauce, vanilla extract, and egg until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until fully combined.
  5. Gently fold in the fresh blueberries.
  6. Spread the batter evenly into the prepared baking dish.
  7. Bake for 30-35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  8. Allow the bars to cool completely before slicing into squares and serving.
