Ingredients
- 4 large yellow onions, thinly sliced
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- Chives, for topping
- Chips or vegetables, for serving
Instructions
- Heat the butter and olive oil in a large skillet over medium heat.
- Add the sliced onions with a pinch of salt and cook, stirring often, for 45 to 60 minutes until deeply golden and caramelized. Reduce heat if they start to burn.
- Once caramelized, remove the onions from heat and let them cool slightly.
- In a bowl, mix the cream cheese, sour cream, and mayonnaise until smooth.
- Stir in the garlic powder, smoked paprika, salt, and pepper.
- Add in the caramelized onions and mix until combined.
- Refrigerate for at least an hour before serving to let flavors meld.
- Top with chopped chives before serving and serve with chips or vegetables.
